Do I need an online store?

No. You can create shipments manually or by importing a file. Connecting a store is an extra option.

What is the difference between a company’s merchant and an independent merchant?

An independent merchant can use stores, the API, webhooks and plans; a delivery company’s merchant can request a pickup from their location.
